Creamy Dill + Cucumber Potato Salad

→ yields 1 big bowl of vegan potato salad, serves 4 as a main, 6 as a side

Ingredients:

- 850g potatoes (30 oz)

- 1 small red onion

- 1 celery stalk

- ½ cucumber a handful of fresh dill

- ¼ cup pickles, chopped

- a handful of fresh chives, parsley, basil etc.

For the dressing:

- ½ cup vegan soy yogurt, unsweetened (125ml)

- 1 ½ tbsp vegan mayo

- 1 tsp mustard

- ¼ tsp smoked paprika

- salt, pepper to taste

- juice of ½ lemon, or more to taste

- 1 tsp agave, if needed (optional)
