Chocolate ‘Brioche’ Buns

*yields 16 buns

4 cups spelt flour (500g)

⅓ tsp salt

½ cup non dairy milk (125ml)

4 tbsp vegan butter, solid = ~ 60g (or ¼ cup + 1 tbsp vegetable oil = 75ml)

1 tsp vanilla 1 pack of active dry yeast (7g)

¼ cup + 2 tbsp raw sugar (62g + 2 tbsp)

½ cup aquafaba (125ml)

¼ cup + 1 tbsp vegan chocolate chips (75g) - feel free to add more chocolate :)

*add some extra flour for the surface

*if the dough is too sticky to knead oil your hands with a tsp of oil
