Chickpea Eggs + Fried Rice, aka Murray’s Breakfast

(From Netflix's "Stranger Things")

Chickpea Omelette:

→ serves 1

⅓ cup chickpea flour (30g)

3 tsp nutritional yeast

3 tbsp aquafaba (aka chickpea water)

¼ cup non dairy milk (60ml)

¼ cup + 1 Tbsp sparkling water (60ml + 1 tbsp) *or sub with reg water 1 tsp apple cider vinegar

¼ tsp kala namak or reg salt, but once again no egg flavour them

¼ tsp smoked paprika pepper to taste

*1 -2 tsp vegan butter or coconut oil or vegetable oil to fry the omelette in

*serve as an omlette or break it apart like in the video

Simple Fried Rice:

1 onion, finely minced + 1 tsp oil for sauteing

1 tbsp tomato purée, optional

~1 cup cooked brown rice (200g)

chickpea mix:

1 ½ tbsp chickpea flour

1 tbsp aquafaba

1 tbsp nutritional yeast

3 tbsp sparkling water

1 tsp apple cider vinegar

¼ tsp kala namak spices of choice

vegan worcestershire sauce or soy sauce to taste
