Pizza Quiche Muffins

*yields 12 muffins

Filling:

1 onion, sauteed

1 block of firm tofu (200g)

1 block of silken tofu (400g)

1 Tbsp nutritional yeast

juice of 1 lemon

3 tbsp white wine vinegar

3 tbsp corn starch

2 tsp coconut oil, solid

2 tsp olive oil

¼ tsp salt, or more to taste

pepper and kala namak to taste (kala namak being optional)

~ 400g of pizza dough or try pie crust or puff pastry 14g

12 tbsp marinara sauce

*Toppings of choice:

vegan cheese, optional
