Sweet Potato Gingerbread Energy Bites

*this makes for about 16 - 20 balls

Ingredients:

- 1/2 cup roasted sweet potato (~100g)

- 12 dates, soaked in water for at least 40 min

- 1/2 cup walnuts (~ 60g)

- 1 Tbsp cocoa powder, unsweetened

- 1 1/2 Tbsp flax seeds

- 1 cup + 5 Tbsp oats (85g + 5 Tbsp)

- 1/2 tsp vanilla

- 1 tsp gingerbread spice* (or pumpkin pie spice)

Notes: alternatively use 1 tsp cinnamon + 1/4 tsp ginger, dried
