Glazed Pumpkin Cookies

Yields 13-15 cookies

Pumpkin Cookies:

1 cup + 2 tbsp spelt flour (125g + 2 tbsp)

½ cup whole wheat flour (65g)

⅓ tsp salt

¾ tsp baking powder

1 ½ tsp pumpkin pie spice*

*sub with 1 tsp cinnamon + a dash each: allspice, nutmeg, cloves, ginger, coriander (all ground, dried)

3 ½ tbsp vegan butter, room temperature (50g)

¼ cup (60ml)

⅓ cup + 1 tbsp raw sugar (80g + 1 tbsp)

2 1/2 tbsp pumpkin purée

1 tsp vanilla

*if needed adjust cookie dough consistency with a tbsp non-dairy milk

Glaze:

~½ cup powdered sugar (62g)

½ tsp vanilla

2-3 tbsp non dairy milk (add 1 tbsp at a time, mix well , then see if you need more)
