Overnight Tofu Hummus Pasta

ingredients:

for the tofu:

1 block firm plain tofu (200g) (7.05 oz)

1 tbsp soy sauce

1 clove garlic, chopped finely

1 tsp mustard

1 tbsp tomato purée

2 tsp olive oil

1 tsp agave or maple or rice syrup

¼ tsp salt, if needed more to taste

spices of choice

for the pasta:

1 bell pepper

1 onion

oil for the pan

¼ cup white wine (or orange or apple juice) (60ml)

~180g pasta (6.3 oz)

for the hummus sauce:

2 heaping tbsp store bought hummus

1 tbsp nutritional yeast

1 tbsp lemon juice

¼ cup non dairy milk (60ml) more to adjust the consistency if needed

season to taste before serving :)

serve with greens + vegan cheese (optional)
