Carrot and Rice Noodle Curry Bowl

*serves 2-3

Curry Mix:

1 red bell pepper

1 onion

2 cloves garlic

the juice of 1 lemon

2 tsp agave

1 tsp curry powder (or use curry paste)

salt, pepper, paprika to taste

hot sauce to taste

1 tbsp vegetable oil

1 can coconut milk

1 tsp cornstarch + 2 tbsp water

fresh herbs

2-3 long carrots, made into noodles
