Caramelized Onion and Mushroom Soup

→ serves 4-6

4-5 big onions, cut into rings

1 tbsp olive or veg oil

2 cloves garlic, finely minced

1 tbsp vegan butter 150g mushrooms, cut into pieces (5.3 oz)

1/3 cup + 1 tbsp white wine (100ml)

1 tbsp soy sauce

2 bay leaves

1 tsp dried herbs (thyme, basil, marjoram.. )

salt, pepper to taste fresh rosemary

1-2 tsp balsamic or white wine or apple cider vinegar

2 tbsp agave

4-6 cups vegetable broth (1- 1 ½ litres)*

*start with 4 cups then gradually more as it's cooking
