Best Vegan Tomato Sauce

~ 250 g cherry tomatoes (~8.8oz)

~ 900g big tomatoes (6-8 big toms) (~32 oz)

2 cloves garlic

1 small carrot 1 big onion or 2-3 small ones

1 tbsp tomato purée

1 tbsp olive oil

1 bay leaf

a handful of fresh thyme and or oregano

1 cup vegetable broth (250ml) cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)

salt, pepper to taste

sweetener to taste, if tomatoes aren’t sweet enough add about 1-2 tsp of sugar/agave ...

200 - 350g pasta of choice (7-10.6oz)
