1 sweet potato, roasted in the oven for 50 min- 1 hour (190C)

cherry tomatoes

baby spinach

lime juice

Yogurt Dressing:

2-3 tbsp plain vegan yogurt,

1 tbsp white wine vinegar,

spices of choice, salt, pepper to taste
