One Pot ‘Everything’ Spaghetti

→ 2-3 servings

1 onion

1-2 handfuls of mushrooms (I think the ones I used are called oyster mushrooms)

1-2 tsp olive oil

1 handful of cashews, whole

1 can kidney beans, drained and rinsed (240g)

1 can of tomatoes, chopped

2 cups vegetable broth (500ml)

if more liquid is needed add water (½ cup - 1 cup) (125ml - 250ml)

200g - 225g pasta, spaghetti or small cut (7-8 oz)

1-2 cups baby spinach

2 tbsp nutritional yeast, more if desired salt and pepper to taste

2 tsp dried Italian herbs seasoned

salt to taste, or any other seasosing you prefer
