Red Lentil Cous Cous Pitas

*servers: 2-3 portions

Ingredients:

- 1 cup red or yellow lentils, uncooked (~180g)

- 2 cups water for the lentils (500ml)

- 3/4 cup cous cous (~140g)

- 1 Tbsp roasted sesame seeds

- 1 medium sized onion

- 1-2 cloves of garlic

- 3 Tbsp tomato purée

- 1-2 tsp dried herbs

- 1/2 cup water

- 1-2 tsp agave syrup

- a handful of fresh parsley

- 1/2 tsp cumin

- salt, pepper to taste

- fresh lemon juice (I added in the entire lemon, start by adding half and see if it needs more)

- 4 pitas

- hummus

- cucumber

- red onion

- fresh basil for the top
