Avocado, Spinach & Chickpea Pasta

Ingredients:

-  ~220g pasta (7,7 oz) for example whole wheat, lentil or bean pasta

- 1 small onion

- 1 clove of garlic

- 1 avocado

- 1/2 cup chickpeas (~85g) + more for the top

- a handful of fresh spinach + more for the top

- 1/2 cup of pasta water (125ml) (I said 1 cup in the video, that's just incase you need/want a thinner consistency)

- 1 avocado

- juice of 1 lemon

- 1 tsp Italian seasoning

- salt & pepper to taste
