Lazy Rice & Lentil Bowl

*serving: 3-4

Ingredients:

- 1 cup white rice (190g), I used Basmati

- ½ cup red lentils (~90g)

- 2 bay leaves

- 2 cups water

- 1 cup veggie broth (250ml) = 1 cup water + 1 tsp powdered vegetable stock

- a few handfuls of fresh baby spinach

for serving:

- 2-3 Tbsp tomato sauce

- nutritional yeast to taste
