Pepper, Tomato + Bean CousCous Bowl

→ 1 handful of fresh spinach per serving

→ serves 4

Ingredients:

- 150g couscous, dried (¾ cup + 1 ½ tbsp)

- 300ml water, for cooking the couscous (~ 1 ¼ cup)

- 1 pepper

- 1 onion

- 1 celery stalk

- 1 tsp olive oil

- 1 clove garlic

- 1 tbsp tomato purée

- 1 can tomatoes

- 1 can white beans

- juice of ½ lemon

- ½ cup water, or more for a thinner consistency (125ml)

- 1 tsp dried Italian herbs

- ½ tsp smoked paprika

- salt to taste
