Simple Falafel Salad

Ingredients:
For the falafels:
1 can chickpeas (240g)
1 onion
2 cloves garlic
juice of ½ lemon
¼ tsp cumin
a dash of pepper
⅓ tsp salt
½ cup quick oats (45g)
1-2 handfuls of fresh basil or parsley
1 tbsp non dairy milk
1 tbsp oil for the pan
For the dressing:
1 heaping tbsp hummus
plain 2 tbsp soy yogurt. unsweetened 1 tbsp lemon juice
salt, pepper to taste if needed
For the salad:
1 sweet potato, roasted or cooked cherry tomatoes
cucumber
spinach
more lemon juice, if needed
