Summer Rolls with Peanut Sauce

ingredients:

for the peanut sauce:

2 tbsp natural peanut butter

1-2 tsp soy sauce

juice of ½ lemon or 1 tbsp white wine vinegar

1 tsp spicy sauce

optional salt to taste

1 tsp rice or maple or agave syrup

oat milk to adjust the consistency (I added like 3 ½ tbsp? start with one and then just keep adding until you’re happy)

for the summer rolls:

rice paper wrappers

some water

fillings of choice (ideas: smoked tofu, avocado, spinach, cucumber, hummus, rice, rice noodles)
