Black Bean Toasts

for the black bean spread:
1-2 cloves of garlic

oil for the pan

1 can black beans, rinsed and drained (240g)

1 tbsp tomato purée

juice of ½ lemon or 1 tbsp white wine vinegar

handful of parsley, chopped, fresh or frozen

1 tbsp soy sauce

spices of choice to taste

for the pickled onions:

1-2 onions, red

1 tsp salt

2-3 tsp sugar or agave

½ cup white wine vinegar (125ml)

2 tbsp apple cider vinegar

¾ cup water (180ml)

*use a jar with 500ml/2 cups volume
