Lemon and Strawberry Rice Pudding

for the pudding:

½ cup brown rice flakes (~45g) OR ~ 1/2 cup cooked sticky or brown rice

1 cup non dairy milk (250ml), more if needed

~ 1 tsp lemon zest

a pinch of salt

sweetener of choice

for the berry sauce:

a handful of strawberries, frozen

⅓ cup water (80 ml) or more to thin it out

sweetener of choice
