Savory Oatmeal

*yields 1-2 portions

Ingredients:

- 1 small onion, red or yellow

- 1 cup oats, super fine (~90g)

- 1 1/2 cups of water or vegetable stock (more of needed) (375ml)

- 1 tsp smoked paprika

- 1 tsp dried Italian herbs

- juice of 1 lemon salt to taste, optional

- 1 Tbsp nutritional yeast

- 1/2 cup kidney beans (~90g)

- a handful of frozen spinach

Topping ideas: avocado, grated carrot, sprouts, fresh herbs

Sundried Tomato Paste:

- a handful of sundried tomatoes (oil free), soaked in hot water for 10 min, then drained

- 1 tsp tomato purée

- 1-2 Tbsp maple syrup

- 1 tsp good quality olive oil (optional)

- 3 Tbsp water (or more if needed)
