Ingredients:
- 1 small to medium sized sweet potato
- 1/2 cup chickpeas, drained (~100g)
- 1/2 apple (or more)
- hummus
- a handful of fresh baby spinach
- parsley, fresh or frozen
- juice of 1/2 lemon
- 1-2 tsp white tahini, feel free to add more seasoned
- salt to taste
- 1 avocado
- 1/2 red onion, cut into thin rings
