Single Serve Mug Pancake

ingredients:

1/3 cup of all purpose flour (40g)

1/2 tsp baking powder

a pinch of salt

1 tbsp of sugar 1

1/2 tbsp unsweetened apple sauce

1/4 tsp vanilla

1/2 tsp apple cider vinegar

3 tbsp non dairy milk

coconut oil for the greasing

toppings of choice like maple syrup, vegan butter, berries, nut butter etc.

NOTES - make sure your mug is oven proof and able to hold at least 160ml (⅔ cup) - the applesauce can be subbed for 1 flax egg (1 tbsp semi ground flax seeds + 2 tbsp water → letting that sit for ~ 10 min, and the person who tested this recipe with the flax egg added 3 1/4 tbsp non dairy milk instead of only 3 tbsp) - I baked it for 20 min @180C and then for 2-3 min @210C to get that nice golden brown top → check after 18-20 min if yours needs to go longer with the higher temp, ovens can vary from what the testers on instagram said, try baking it for 1:45-2:00 min at 700-800 watt
