Tofu Spinach Pastry Bites

*makes 15-20 bites

1 block of firm tofu

a generous pinch of salt (or to taste)

the juice of 1 lemon

2 tsp white wine vinegar

1 tbsp vegan butter

2 cloves of garlic, minced

150g frozen spinach, defrosted (5.3oz)

→ or sub with 4-5 handfuls of fresh spinach, let it wilt down for about 3 minutes 200-250g of puff pastry (i used up about 5 of these square sheets)

→ leave the dough in the fridge until just before you start working with it
