Cauliflower Pasta Salad

*serves 4

1 onion

200 - 250 g cremini mushrooms (7 - 8.8oz)

1 head of cauliflower (500 - 700g), (1.1 - 1.5 pounds)

1 tbsp olive oil for the cauliflower

1 tsp oil for the onions/mushrooms

1-3 garlic cloves, whole with peel

juice of 1 lemon

1 cup + ¼ cup non dairy milk (250ml + 60ml)

½ cup pasta water, more if needed (125ml)

2 tbsp white wine vinegar

1 tbsp bbq sauce

salt, pepper to taste

nutritional yeast to taste (I used 2-3 tsp)

250 - 300 g pasta, short cut (8.8 - 10.6 oz)
