Vanilla Mug Cake

Serves 1 or 2 for sharing


- 1-2 tsp coconut oil, solid

- ¼ tsp vanilla

- 3 tbsp non dairy milk

- ½ tsp apple cider vinegar

- 1 tbsp sugar*

- a pinch of salt

- ¼ tsp baking powder

- 3 ½ tbsp spelt or all purpose flour

Notes: *I used maple sugar, you can substitute with raw or coconut sugar. I’ve never tried using a liquid sweetener before. If you try it, maybe use 1 tbsp less plant milk and see how you get on. Let me know if it works!
