Healthy Tiramisu

ingredients:

1 cup cashews (150g)

1 1/2 cups + 1 tbsp plain soy yogurt (400g = 14.01 oz)

the juice of 1 lemon

1 tsp vanilla or a couple of vanilla aroma drops

3-4 tbsp sweetener of choice, more to taste if needed

optional: 1 ½ tsp carob flour or similar stabilizer

¾ cup strong black coffee (180ml)

optional: add 1-2 tbsp maple syrup to the coffee

hard dry rusk biscuits - I used 12-14 pieces of spelt zwieback

yields 1 smaller-sized casserole dish (mine was 15x23 cm)
