Blueberry Coconut Cookie

→ yields ~ 12 big cookies → 16 - 18 smaller ones

2 cups spelt flour (240g)

½ tsp salt

1 tsp baking powder

½ cup shredded coconut

⅓ cup melted vegan butter (80ml)*

*or sub with coconut oil but beware the coconut taste, veg oil would be a better option

3 tbsp unsweetened apple sauce

½ + cup raw sugar (125g)

¼ cup non dairy milk (60ml)

½ cup blueberries, fresh or frozen
