Mini Carrot Cake (low fat)

Here's one of my favorite recipes :) Ingredients: 2 Cups flour (spelt, all purpose, whole wheat) 1 1/2 tsp baking soda 1/2 teaspoon cinnamon 2/3 Cup raw sugar 1 Cup almond milk (or any other plant milk you like) 3/4 Cup unsweetened apple sauce 2 Tbsp apple cider vinegar (or white vinegar) 1 Cup shredded carrots coconut oil for greasing (optional) toppings: almond butter, shredded coconut, nuts etc.
