Homemade Cig Köfte in Lettuce Wraps with Tahini-Less Hummus (or 'Whipped Chickpeas')

for the cig köfte lettuce wraps:

75g red lentils, dried (½ cup minus 2 tbsp)

½ tsp vegetable broth powder

~ ¾ cup water to cook the lentils ( ~180ml)

1 cup extra fine bulgur or couscous, dried (170g)

1 cup + 2 tbsp boiling hot water (280ml)

1 onion

1 clove of garlic

oil for onion and garlic

1 ½ tbsp tomato purée

the juice of 1 lemon, more to taste if needed

salt to taste

5-6 tbsp of cooked red lentils

a handful of parsley, fresh or frozen

lettuce wraps

hummus

more lemon juice for serving

*if you're using quinoa or millet instead make sure to actually boil it instead of just pouring the hot water on top, I know obvious but I wanted to clarify that haha

for the tahini-less hummus:

1 can of chickpeas, rinsed and drained(220 - 240g)

2 ½ tbsp olive oil

2 tbsp oat milk

juice of ½ lemon

2 tsp agave

salt to taste

spices of choice to taste

fresh parsley, optional
