Roasted Sweet Potato with Pickled Onions

Onions:

3-4 red onions or shallots

¾ cup apple cider vinegar or white wine vinegar (180ml)

1 tsp salt

1 Tbsp + 1 tsp sugar

Dressing:

1 tsp mustard

1 tbsp olive oil or oat cream

1 tbsp white wine vinegar

1-2 tbsp non dairy milk

1 tsp date, rice, agave, maple - syrup

salt, pepper to taste

fresh or dried dill, optional

Assemble the bowl:

a few handfuls of greens

2 sweet potatoes, roasted at 190 C for 45 min to an hour extra

lemon juice, optional

hummus avocado

chia seeds, fresh herbs
