Roasted Cauliflower Peanut Bowl

Roasted Cauliflower:

1 head of cauliflower, cut into florets a pinch of salt

1 tbsp oil

½ tsp smoked paprika

¼ tsp cumin

Sauce:

2-3 tbsp peanut butter

1 onion

1 clove garlic

1 tiny piece of ginger, about 1 inch, 2.5cm

1 tsp oil to sautée

the juice of ½ lemon

½ cup non-dairy milk, unsweetened (125ml)

salt, pepper to taste

Cooked starch of choice":

*I made a small mistake in the video by saying double the amount of water, I meant to say the same amount of water, volume-wise. SO:

1 cup couscous, dried (~180g)

1 cup hot boiling water (250ml)

1 tsp vegetable broth powder

Toppings: avocado, cherry tomatoes, pickled onions, etc.
