Roasted Sweet Potato and Carrot Soup
Ingredients:
- 600g sweet potatoes (21 oz)
- 250g carrots (9 oz)
- 1-2 red onions
- 1 tbsp coconut oil
- juice of 1/2 lemon
- 1 tbsp tomato purée
- 1 tsp tumeric
- 4 cups veggie broth (1 litre)
- salt, pepper to taste
