‘feta’ style cream cheese:

juice of 1 lemon

1 block firm tofu (200g)

1 tbsp olive oil

2 tbsp pickle juice

1 ½ tbsp white wine vinegar

1 tsp salt

½ tsp onion powder

2 tbsp coconut oil, solid

assemble with: toast, avocado, lettuce etc
